This tomato zucchini tart is one of my favorite ways to use up fresh garden produce. It has a wonderful buttery crust and the combination of roasted tomatoes and zucchini tastes like a sunny afternoon in the garden.

You can save plenty of time by using a store bought pie crust, but feel free to make your own if you have a favorite recipe. It is a fantastic dish for a light lunch or even as a pretty appetizer for your next dinner party.

Ingredients

  • 1 store bought or homemade pie crust
  • 1 medium zucchini, thinly sliced
  • 2 large tomatoes, thinly sliced
  • 1 cup shredded parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 egg, beaten for egg wash

Instructions

    Preheat your oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.

    Roll out your pie crust on the baking sheet into a large circle or rectangle.

    Sprinkle about half of the parmesan cheese over the center of the crust, leaving an inch of space around the edges.

    Arrange the zucchini and tomato slices on top of the cheese in a pattern you like.

    Drizzle the vegetables with olive oil and sprinkle them with the oregano, salt, pepper, and the remaining parmesan.

    Fold the edges of the dough over the vegetables to create a rustic crust.

    Brush the edges of the dough with the beaten egg.

    Bake for 25 to 30 minutes until the crust is golden brown and the vegetables are tender.

    Let it cool for a few minutes before slicing and serving.

Store any leftovers in an airtight container in the fridge for up to two days. Reheat it in the oven at 350 degrees to keep the crust nice and crispy rather than using the microwave.
