Easy Salmon Croquettes
These crispy salmon croquettes are a fantastic way to turn canned salmon into a comforting and delicious family dinner.
dailyrecipesbook.comSalmon croquettes have been a staple in my kitchen for years because they are so simple to put together on a busy night. Using pantry staples like canned salmon, breadcrumbs, and a few fresh herbs creates a flavorful meal that feels much fancier than it actually is.
My favorite trick for getting the best texture is to make sure you drain the salmon well before mixing. If you love a crunch, pan frying them in a little oil is the way to go, but baking them works perfectly if you want to keep things light and avoid the stovetop splatter.
Ingredients
- 1 can (14 ounces) salmon, drained and flaked
- 1 cup panko breadcrumbs
- 1/4 cup finely diced bell pepper
- 1 tablespoon Dijon mustard
- 1 teaspoon lemon juice
- 1 tablespoon fresh herbs like parsley or dill
- 1 egg, lightly beaten
- Salt and black pepper to taste
- 2 tablespoons oil for frying
Instructions
- 1
Place the flaked salmon in a large mixing bowl and remove any large pieces of bone or skin.
- 2
Add the panko, diced bell pepper, Dijon mustard, lemon juice, herbs, and the beaten egg to the bowl.
- 3
Mix everything together until the ingredients are just combined.
- 4
Shape the mixture into small patties using your hands.
- 5
Heat the oil in a large skillet over medium heat.
- 6
Cook the patties for about 3 to 4 minutes on each side until they are golden brown and crispy.
- 7
Remove from the pan and serve while hot.
๐ก Tips
These are wonderful served with a dollop of tangy tartar sauce and a fresh side salad. If you have any leftovers, store them in an airtight container in the fridge for up to two days and reheat them in a toaster oven to bring back the crunch.
