Hot Honey Crunchy Cornflake Baked Chicken
This crispy baked chicken is coated in crunchy cornflakes and finished with a sweet and spicy honey glaze.
dailyrecipesbook.comThere is something so satisfying about the crunch of cornflake chicken. It is a family favorite in my house because it tastes like fried chicken but stays much lighter since we bake it in the oven.
My secret to getting that perfect texture is to crush the cornflakes just enough so they stick to the chicken but still provide a hearty crunch. If you like a little extra heat, feel free to add more chili flakes to the honey drizzle.
Ingredients
- 2 pounds chicken tenders or boneless breasts cut into strips
- 4 cups cornflakes, lightly crushed
- 1 cup all purpose flour
- 2 large eggs, beaten
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup honey
- 1 tablespoon hot sauce
- 1/2 teaspoon crushed red pepper flakes
Instructions
- 1
Preheat your oven to 400 degrees Fahrenheit and line a large baking sheet with parchment paper.
- 2
In a shallow bowl, mix the flour with the garlic powder, onion powder, paprika, salt, and pepper.
- 3
Place the beaten eggs in a second shallow bowl and the crushed cornflakes in a third shallow bowl.
- 4
Dredge each piece of chicken in the flour, dip it into the eggs, and then coat it thoroughly with the crushed cornflakes, pressing down so the flakes stick well.
- 5
Arrange the coated chicken on your prepared baking sheet in a single layer.
- 6
Bake for 20 minutes or until the chicken is cooked through and the coating is golden brown.
- 7
While the chicken bakes, whisk together the honey, hot sauce, and red pepper flakes in a small bowl.
- 8
Once the chicken is out of the oven, drizzle the hot honey mixture over the pieces before serving.
๐ก Tips
Serve this chicken immediately while the coating is at its crunchiest. If you have leftovers, store them in an airtight container in the fridge for up to two days and reheat them in the oven to bring back the crispiness.
