This tuna rice bowl is my absolute favorite when I need a healthy meal without spending hours in the kitchen. It is creamy, spicy, and packed with fresh crunch from the vegetables.

My secret to the best bowl is making sure the rice is nice and fluffy. If you have leftover rice in the fridge, this meal comes together even faster than fifteen minutes.

Ingredients

  • 2 cups cooked white or brown rice
  • 1 can of tuna in water, drained
  • 2 tablespoons mayonnaise
  • 1 tablespoon sriracha
  • 1 teaspoon soy sauce
  • 1/2 cucumber, sliced
  • 1/4 cup shredded carrots
  • 1 green onion, thinly sliced
  • 1 teaspoon sesame seeds
  • 1 sheet of toasted seaweed, shredded

Instructions

    Divide the cooked rice into two serving bowls.

    In a small mixing bowl, combine the drained tuna, mayonnaise, sriracha, and soy sauce until well blended.

    Spoon the spicy tuna mixture over the rice in each bowl.

    Arrange the cucumber slices and shredded carrots on top.

    Garnish everything with the sliced green onions, sesame seeds, and shredded seaweed before serving.

Store any leftovers in the fridge for up to one day, but keep the veggies and tuna separate from the rice if possible to maintain freshness. You can add a drizzle of toasted sesame oil for extra flavor or swap the mayo for Greek yogurt to keep it lighter.
