This casserole is a total favorite in my house because it feeds a crowd without any stress. It is the perfect thing to pull out of the oven on a slow weekend morning when you want something warm and filling.

My best tip is to get your veggies chopped the night before so you can just toss everything together in the morning. It makes the whole process feel so much faster when you are still waking up with your first cup of coffee.

Ingredients

  • 1 package frozen tater tots
  • 1 pound breakfast sausage
  • 1 cup diced bell peppers
  • 1/2 cup diced onions
  • 8 large eggs
  • 1/2 cup milk
  • 2 cups shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

    Preheat your oven to 375 degrees Fahrenheit and grease a 9x13 inch baking dish.

    Arrange the frozen tater tots in an even layer at the bottom of the dish and bake them for 15 minutes to get them started.

    While the tots are in the oven, brown the sausage in a skillet over medium heat until fully cooked. Add the peppers and onions, cooking until they are soft.

    Whisk the eggs, milk, salt, and pepper together in a large bowl.

    Spread the cooked sausage and vegetable mixture over the par baked tater tots.

    Sprinkle the cheese over the top and then pour the egg mixture evenly across the whole dish.

    Bake for 30 to 35 minutes until the eggs are set and the cheese is bubbly and golden brown.

Store any leftovers in an airtight container in the fridge for up to three days. You can easily reheat individual slices in the microwave. This dish also freezes well if you want to make it ahead of time.
