I love making this salad whenever I have leftover roast turkey in the fridge. It is such a bright and satisfying dish that comes together in just a few minutes, making it ideal for a busy lunch or a light dinner.

The secret to this salad is the crunch from the sunflower seeds combined with the creamy cheese and tart cranberries. If you want a little extra flavor, try adding a squeeze of fresh lemon juice or a pinch of cracked black pepper before serving.

Ingredients

  • 2 cups cooked turkey, shredded or cubed
  • 1/2 cup dried cranberries
  • 1/4 cup red onion, finely diced
  • 1/4 cup sunflower seeds
  • 1/3 cup creamy cheese, such as feta crumbles or goat cheese
  • 1/3 cup mayonnaise or Greek yogurt
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. 1

Place your prepared turkey in a large mixing bowl.

  2. 2

Add the dried cranberries, diced red onion, sunflower seeds, and your choice of cheese to the bowl.

  3. 3

In a small separate bowl, whisk together the mayonnaise or yogurt with the Dijon mustard until smooth.

  4. 4

Pour the dressing over the turkey mixture and toss everything together until well coated.

  5. 5

Season with salt and pepper to your liking and serve immediately or chill in the fridge for an hour to let the flavors meld.

๐Ÿ’ก Tips

You can serve this salad over a bed of fresh greens or scoop it into lettuce wraps for a crunchier bite. Store any leftovers in an airtight container in the refrigerator for up to three days.
