- 1.5 cups fresh or frozen corn kernels
- 1/2 cup all purpose flour (or a gluten free blend)
- 1/4 cup plant based milk
- 2 tablespoons finely chopped fresh jalapeño, seeds removed if you prefer less heat
- 2 tablespoons nutritional yeast
- 1 tablespoon chopped fresh cilantro or parsley
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Vegetable oil for frying

In a medium bowl, combine the corn kernels, plant based milk, chopped jalapeño, nutritional yeast, cilantro or parsley, baking powder, salt, and pepper. Mix everything together well.
