There is nothing quite like a fresh veggie sandwich when you want a light meal that actually keeps you satisfied. It is one of my favorite go to lunches because it is so easy to put together on a busy day.

I love using a mix of crunchy cucumbers and creamy avocado to get the best texture. If you want to make this even better, try spreading a little bit of herb cream cheese on the bread before adding your veggies.

Ingredients

  • 2 slices of your favorite whole grain bread
  • 1/2 ripe avocado, sliced
  • 1/4 cup cucumber, thinly sliced
  • 1/4 cup red bell pepper, thinly sliced
  • 1 handful of fresh baby spinach
  • 1 tablespoon mayonnaise or Greek yogurt
  • 1 teaspoon lemon juice
  • A pinch of salt and black pepper

Instructions

    Toast your bread slices until they are lightly golden and firm.

    In a small bowl, mix the mayonnaise or Greek yogurt with the lemon juice, salt, and pepper.

    Spread the dressing mixture onto one side of each bread slice.

    Layer the avocado slices onto one piece of bread and gently mash them with a fork.

    Add the cucumber, bell pepper, and spinach on top of the avocado.

    Place the second slice of bread on top, press down gently, and cut the sandwich in half to serve.

To prevent the bread from getting soggy, pat your washed vegetables dry with a paper towel before assembling. You can store leftover avocado slices in an airtight container with a splash of lemon juice to keep them from turning brown.
