This Greek pasta salad is a staple in my house whenever the weather warms up. It is light enough for a picnic but filling enough to stand alone as a simple dinner on a busy weeknight.

My favorite thing about this dish is how the feta cheese gets a little creamy when it hits the warm pasta. Be sure to let the salad sit in the fridge for at least thirty minutes before serving so the dressing can soak into the vegetables.

Ingredients

  • 1 pound rotini or fusilli pasta
  • 1 pint cherry tomatoes, halved
  • 1 large cucumber, chopped
  • 1 red onion, thinly sliced
  • 1 cup kalamata olives, pitted and halved
  • 8 ounces feta cheese, crumbled
  • 1/2 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon dried oregano
  • 1 clove garlic, minced
  • Salt and black pepper to taste

Instructions

    Bring a large pot of salted water to a boil and cook the pasta according to the package directions until al dente.

    Drain the pasta and rinse it under cold water to stop the cooking process, then drain well again.

    In a large mixing bowl, whisk together the olive oil, red wine vinegar, dried oregano, minced garlic, salt, and pepper to make the dressing.

    Add the cooled pasta, tomatoes, cucumbers, onion, and olives to the bowl with the dressing.

    Toss everything together until well coated.

    Gently fold in the crumbled feta cheese just before serving so it stays in nice chunks.

Store any leftovers in an airtight container in the fridge for up to three days. If the pasta absorbs the dressing overnight, add a little extra splash of olive oil and a squeeze of lemon juice before serving the next day.
