This mango salsa is one of my favorite things to whip up when I want something bright and flavorful. It pairs perfectly with grilled fish, chicken, or just a big bowl of salty tortilla chips on a warm afternoon.

I love how the sweetness of the mango balances out the spicy kick from the peppers. If you want to save some time, you can chop all the ingredients in advance and store them in the fridge until you are ready to serve.

Ingredients

  • 2 ripe mangoes, peeled and diced
  • 1/2 red onion, finely chopped
  • 1 red bell pepper, diced
  • 1 jalapeño, seeded and minced
  • 1/2 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1/4 teaspoon salt

Instructions

    Prepare your mangoes by peeling them and cutting the flesh into small, bite sized cubes.

    In a medium mixing bowl, combine the diced mangoes, red onion, red bell pepper, and minced jalapeño.

    Add the fresh cilantro and pour the lime juice over the top.

    Sprinkle with the salt and gently toss everything together until well combined.

    Let the salsa sit for about ten minutes before serving so the flavors have a chance to mingle.

💡 Tips

Store any leftovers in an airtight container in the refrigerator for up to two days. This salsa tastes even better after it has chilled for a while. Serve it alongside grilled shrimp or tacos for a fresh dinner.
