This salad is one of my absolute favorites when I need a quick lunch or a refreshing side dish for dinner. It is packed with textures and bright, zesty flavors that make every bite feel special.

My top tip is to fluff the couscous with a fork right after it sits for five minutes. This keeps the grains light and separate rather than clumpy.

Ingredients

  • 1 cup dry couscous
  • 1 cup vegetable broth or water
  • 1/3 cup sun dried tomatoes, chopped
  • 1/4 cup toasted almonds, slivered
  • 1 cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • Salt and black pepper to taste

Instructions

    Bring the vegetable broth or water to a boil in a small pot.

    Stir in the dry couscous, cover the pot, and remove it from the heat.

    Let the couscous sit for five minutes, then fluff it with a fork and transfer it to a large mixing bowl.

    Add the chopped sun dried tomatoes, toasted almonds, cucumber, cherry tomatoes, red onion, and parsley to the bowl.

    In a separate small jar or bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper.
