There is something so satisfying about a bowl of pasta that feels fresh rather than heavy. This orzo salad is a staple in my kitchen whenever I need something quick, colorful, and healthy to serve for lunch or as a side with dinner.

The trick to a great orzo salad is to make sure you rinse your cooked pasta with cold water right after draining it. This stops the cooking process and keeps the grains from sticking together in a clump.

Ingredients

  • 1 cup dry orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • Salt and black pepper to taste

Instructions

    Bring a large pot of salted water to a boil and cook the orzo according to the package directions until tender.
