Fresh Mediterranean Orzo Pasta Salad
This light and colorful salad is the perfect way to enjoy fresh veggies with a bright, zesty dressing.
dailyrecipesbook.comThere is something so satisfying about a bowl of pasta that feels fresh rather than heavy. This orzo salad is a staple in my kitchen whenever I need something quick, colorful, and healthy to serve for lunch or as a side with dinner.
The trick to a great orzo salad is to make sure you rinse your cooked pasta with cold water right after draining it. This stops the cooking process and keeps the grains from sticking together in a clump.
Ingredients
- 1 cup dry orzo pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- Salt and black pepper to taste
Instructions
- 1
Bring a large pot of salted water to a boil and cook the orzo according to the package directions until tender.
- 2
Drain the orzo and rinse it immediately under cold running water until it is completely cooled.
- 3
In a large mixing bowl, combine the cooled orzo, cherry tomatoes, cucumber, red onion, feta cheese, and parsley.
- 4
In a small jar or bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper.
- 5
Pour the dressing over the salad and toss everything together until well coated.
- 6
Serve right away or let it sit in the fridge for thirty minutes to allow the flavors to blend.
๐ก Tips
This salad tastes even better the next day once the dressing soaks in. Store any leftovers in an airtight container in the fridge for up to three days. If you want a bit more protein, add a tin of chickpeas or some grilled chicken.
