This Mediterranean sandwich is my go to lunch when I want something fresh and filling. It brings together crunchy veggies, salty feta, and aromatic basil pesto for a meal that feels like a little vacation on a plate.

I recommend using a sturdy bread like ciabatta or sourdough so it holds up well to all the delicious toppings. If you are packing this for work, keep the pesto in a small container and spread it right before you eat to keep the bread from getting soft.

Ingredients

  • 2 slices of hearty sourdough or ciabatta bread
  • 2 tablespoons basil pesto
  • 1/4 cup crumbled feta cheese
  • 4 slices of cucumber
  • 2 slices of tomato
  • 1/4 red bell pepper, sliced into strips
  • A small handful of fresh spinach or arugula
  • 2 slices of red onion, optional
  • 1 tablespoon balsamic glaze

    Toast your bread slices lightly if you prefer a bit of extra crunch.

    Spread the basil pesto generously on one side of both bread slices.
