When summer peaches are at their peak, this salsa is the best way to enjoy them. It is so much better than store bought versions because you control the sweetness and the crunch. Everyone loves how the bright lime juice pulls all these fresh ingredients together into a crowd pleasing snack.

I love serving this because it feels special but comes together in just a few minutes. If you want a bit more heat, just leave the seeds in your jalapeño. If you want a milder onion flavor, soak the chopped red onion in cold water for ten minutes before mixing it in.

Ingredients

  • 3 large or 4 medium fresh peaches, diced
  • 1 small red bell pepper, diced
  • 1 small ripe tomato, diced
  • 1 jalapeño, seeds and membranes removed and finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Zest and juice of 1 lime
  • 1/4 teaspoon kosher salt, plus more to taste

Instructions

    Dice the peaches, red bell pepper, tomato, and red onion into uniform, bite sized pieces.

    Finely chop the jalapeño and the fresh cilantro.

    Add all the chopped ingredients to a medium sized mixing bowl.

    Add the lime zest, lime juice, and salt to the bowl.

    Stir everything together gently so you do not crush the soft peaches.

    Taste and add more salt if you think it needs it.

    Serve immediately or place in the refrigerator for 30 minutes to let the flavors blend.

💡 Tips

Store any leftovers in an airtight container in the refrigerator for up to two days. This salsa is delicious served over grilled chicken or white fish, or simply scooped up with a bowl of salty tortilla chips.
