Fresh Summer Garden Pasta
A light and flavorful pasta dish that celebrates the very best produce of August.

I love serving this for a relaxed dinner on the patio during a warm evening. If you have extra zucchini or corn from your garden, feel free to toss a little more in as the fresh veggies really make the meal shine.
Ingredients
- 12 ounces linguine or spaghetti
- 2 tablespoons olive oil
- 2 medium zucchini, diced
- 2 cups fresh corn kernels
- 2 cups cherry tomatoes, halved
- 2 cloves garlic, minced
- 1/4 cup fresh basil leaves, torn
- 1/2 cup grated parmesan cheese
- Salt and black pepper to taste
Instructions

Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente.

While the pasta cooks, heat the olive oil in a large skillet over medium heat.

Add the diced zucchini to the skillet and sautรฉ for about 5 minutes until it starts to soften.

Stir in the corn and garlic, cooking for another 3 minutes until the corn is tender and fragrant.

Add the cherry tomatoes to the pan and cook for 2 minutes just until they begin to release their juices.

Drain the pasta, reserving a splash of the cooking water, and add the noodles directly into the skillet with the vegetables.

Toss everything together with the fresh basil and parmesan cheese, adding a little pasta water if you want a lighter sauce.

Season with salt and pepper to your liking and serve immediately.

Store any leftovers in an airtight container in the fridge for up to two days. This dish is great served cold as a pasta salad for lunch the next day if you want to switch things up. Top with a squeeze of fresh lemon juice right before serving to brighten all the flavors.
