Simple Lemon Herb Roasted Chicken
A classic and comforting roast chicken seasoned with fresh herbs and zesty lemon.
dailyrecipesbook.comThere is nothing quite like the smell of a whole chicken roasting in the oven to make a house feel like a home. This recipe is a staple in my kitchen because it is simple to prepare and always turns out juicy with crispy skin.
I love serving this on a Sunday night for a cozy family dinner. My best tip is to let the chicken rest for at least ten minutes after taking it out of the oven so the juices redistribute throughout the meat.
Ingredients
- 1 whole roasting chicken, about 4 pounds
- 2 tablespoons olive oil
- 1 lemon, halved
- 4 cloves garlic, smashed
- 4 sprigs fresh rosemary
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
Instructions
- 1
Preheat your oven to 400 degrees Fahrenheit.
- 2
Pat the chicken dry with paper towels to ensure the skin gets nice and crispy.
- 3
Rub the olive oil all over the chicken, then season the skin evenly with salt, pepper, and oregano.
- 4
Stuff the cavity of the chicken with the lemon halves, garlic cloves, and rosemary sprigs.
- 5
Place the chicken on a roasting rack or in a shallow baking pan.
- 6
Roast for about 60 to 75 minutes, or until an instant read thermometer inserted into the thickest part of the thigh reads 165 degrees Fahrenheit.
- 7
Remove from the oven and let the chicken rest on a cutting board for 10 minutes before carving and serving.
