There is nothing quite like the taste of fresh summer corn. This simple salsa brings together sweet kernels, crisp vegetables, and a zesty lime dressing that everyone seems to love at potlucks and parties.

I find that this salsa actually tastes even better after it sits in the fridge for an hour. It gives all those fresh ingredients a chance to really get to know each other before you serve it with your favorite tortilla chips.

Ingredients

  • 4 cups fresh corn kernels, cooked and cooled
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup fresh lime juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

    Prepare the corn by boiling or grilling it, then cutting the kernels off the cob once they have cooled down.

    In a large mixing bowl, combine the corn kernels with the diced red bell pepper, chopped red onion, minced jalapeño, and fresh cilantro.

    In a separate small jar or bowl, whisk together the lime juice, olive oil, chili powder, salt, and black pepper.

    Pour the dressing over the corn mixture and toss everything together until well combined.

    Taste and adjust the salt or lime juice if you feel it needs a little extra zing, then serve chilled or at room temperature.

💡 Tips

Store any leftovers in an airtight container in the refrigerator for up to three days. This salsa is wonderful served over grilled chicken or fish for a healthy dinner option.
