Fresh Vegetable Spring Rolls

Ingredients
- 8 rice paper wrappers
- 2 ounces thin rice vermicelli noodles
- 1 cup shredded carrots
- 1 cup thinly sliced cucumber
- 1 cup fresh bean sprouts
- 1/2 cup fresh cilantro leaves
- 1/2 cup fresh basil leaves
- 1/4 cup hoisin sauce or sweet chili sauce for dipping
Instructions

Cook the rice vermicelli noodles in boiling water for about three minutes, then drain and rinse them with cool water.

Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for a few seconds until it softens, then lay it flat on a clean cutting board.

Place a small handful of noodles, carrots, cucumber, bean sprouts, and herbs in the center of the wrapper.

Fold the sides of the wrapper inward and roll it up tightly starting from the bottom.

Repeat this process with the remaining wrappers and filling ingredients.

Serve your rolls immediately with your favorite dipping sauce on the side.

These are best eaten right away while the rice paper is soft and fresh. If you need to store them, wrap each roll individually in plastic wrap to keep them from sticking to each other, and keep them in the fridge for up to one day.
