There is something so satisfying about the crunch of fresh zucchini fried to golden perfection. It turns a simple garden vegetable into a treat that disappears from the plate almost as soon as it is served.

My biggest tip for this recipe is to make sure your oil is nice and hot before you drop the slices in. If the oil is not hot enough, the breading will soak up the grease rather than getting that beautiful crispy crust we all love.

Ingredients

  • 2 medium zucchini, sliced into thin rounds
  • 1/2 cup all purpose flour
  • 2 large eggs, beaten
  • 1 cup seasoned breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1/2 cup vegetable oil for frying
  • Salt and pepper to taste

Instructions

    Set up three shallow bowls for your breading station. Place the flour in the first bowl, the beaten eggs in the second bowl, and mix the breadcrumbs with the parmesan cheese in the third bowl.

    Season the zucchini slices lightly with salt and pepper.

    Dip each slice of zucchini first into the flour, then into the egg, and finally press it into the breadcrumb mixture until it is well coated.

    Heat the vegetable oil in a large skillet over medium heat.

    Fry the zucchini in batches, making sure not to crowd the pan, for about two to three minutes on each side until they are golden brown and crispy.

    Remove the slices from the pan and let them drain briefly on a plate lined with paper towels before serving.

These are best enjoyed fresh and hot right out of the pan. Serve them with a side of warm marinara sauce or creamy ranch dressing. If you have leftovers, store them in the fridge and reheat in an oven or air fryer to regain some of that crunch.
