There is nothing quite like a cold chicken salad on a warm afternoon. This dish is a favorite in my house because it feels light but still keeps everyone full and happy. The secret is the green goddess dressing, which adds such a bright pop of flavor to the tender chicken.

I love serving this on a toasted croissant or tucked inside a crisp lettuce leaf. If you have extra herbs like dill or parsley growing in your garden, this is the perfect way to use them up.

Ingredients

  • 2 cups cooked chicken breast, shredded or diced
  • 1 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh chives, chopped
  • 2 tablespoons fresh tarragon, chopped
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1 cup celery, finely diced
  • 1/2 cup green onions, sliced
  • Salt and black pepper to taste

Instructions
