If you love the flavor of a loaded deli sub but want something a bit lighter and easier to prep for the week, this bean salad is exactly what you need. It uses a mix of hearty beans and savory salami to give you that familiar grinder taste without the heavy bread.

My favorite thing about this salad is that it actually tastes better after sitting in the fridge for a day. The dressing soaks into the beans perfectly, so feel free to mix this up on a Sunday and enjoy it for your lunches all week long.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 can cannellini beans, drained and rinsed
  • 1/2 cup diced salami
  • 1/2 cup diced provolone cheese
  • 1/2 cup chopped iceberg lettuce
  • 1/4 cup diced red onion
  • 1/4 cup sliced pepperoncini peppers
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. 1

Grab a large mixing bowl and combine the drained chickpeas, cannellini beans, salami, provolone cheese, red onion, and pepperoncini.

  2. 2

In a small jar or bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until it is well combined.

  3. 3

Pour the dressing over the bean mixture and toss everything together until it is coated evenly.

  4. 4

Gently fold in the chopped iceberg lettuce just before you are ready to eat so it stays nice and crunchy.

  5. 5

Taste your salad and add an extra pinch of salt or pepper if you think it needs it.

๐Ÿ’ก Tips

Store your salad in an airtight container in the fridge for up to three days. If you plan on keeping it longer, wait to add the fresh lettuce until right before you serve each portion to keep the crunch.
