You are going to love how easy these little jars are to put together. They have a lovely creamy texture thanks to the cottage cheese and Greek yogurt, which also gives you a nice protein boost to keep you full.

I like to make these ahead of time so I have a grab and go snack ready for busy days. Just layer your favorite granola and peanut butter goodness, and you have a delicious meal in a jar.

Ingredients

  • 1 cup cottage cheese
  • 1/2 cup Greek yogurt
  • 2 tablespoons natural peanut butter
  • 1 tablespoon maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chocolate granola
  • 1 peanut butter cup, chopped
  • Fresh berries for serving

Instructions

  1. 1

Place the cottage cheese, Greek yogurt, peanut butter, sweetener, and vanilla extract into a blender.

  2. 2

Process the mixture until it is completely smooth and creamy.

  3. 3

Spoon a layer of chocolate granola into the bottom of two small jars or glasses.

  4. 4

Divide the cheesecake mixture evenly between the jars on top of the granola.

  5. 5

Top each jar with the chopped peanut butter cup pieces and a handful of fresh berries.

  6. 6

Serve immediately or keep them in the fridge until you are ready to eat.

๐Ÿ’ก Tips

These jars stay fresh in the refrigerator for up to three days. If you want the granola to stay nice and crunchy, add it right before you plan to eat your snack instead of layering it ahead of time.
