Homemade Caesar Dressing

This creamy, rich dressing is so much better than the store bought kind and takes just minutes to whisk together.

There is truly nothing like making your own Caesar dressing from scratch. Once you taste how fresh and garlicky it is, you will never want to go back to the bottled stuff again.

I love serving this over a crisp romaine salad with plenty of parmesan cheese. If you have time, let it sit in the fridge for an hour before serving so the flavors can really get to know each other.

Ingredients

  • 2 cloves garlic, minced
  • 2 teaspoons anchovy paste
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup high quality mayonnaise
  • 1/3 cup freshly grated Parmesan cheese
  • 1/4 cup extra virgin olive oil
  • Salt and black pepper to taste

Instructions

    In a medium bowl, whisk together the minced garlic, anchovy paste, Dijon mustard, lemon juice, and Worcestershire sauce until smooth.

    Add the mayonnaise and whisk until the mixture is fully combined.

    Slowly drizzle in the olive oil while whisking constantly to help the dressing emulsify.

    Stir in the grated Parmesan cheese.

    Taste the dressing and add salt and black pepper according to your preference.

    Keep refrigerated until you are ready to serve.

๐Ÿ’ก Tips

Store your leftover dressing in a glass jar in the refrigerator for up to one week. If it thickens too much while chilled, just add a tiny splash of water or lemon juice and stir it well before serving.
