There is something so comforting about a toasted sandwich filled with melted cheese and creamy avocado. This recipe brings that popular cafe flavor right into your own kitchen using simple ingredients that come together quickly.

I love making these for a fast lunch when I want something satisfying. My best tip is to use a good quality sourdough bread because the tanginess pairs perfectly with the smoky chipotle sauce.

Ingredients

  • 2 slices sourdough bread
  • 1/2 cup cooked chicken breast, shredded or sliced
  • 1/4 ripe avocado, sliced
  • 1 slice smoked gouda cheese
  • 1 tablespoon mayonnaise
  • 1 teaspoon chipotle peppers in adobo sauce, minced
  • 1 tablespoon butter, softened

Instructions

    Mix the mayonnaise and minced chipotle peppers together in a small bowl to create your sauce.
