There is something so special about waking up to the smell of chocolate cooking on the stovetop. These crepes are light and delicate, making them the perfect vessel for your favorite toppings like fresh berries, whipped cream, or a warm drizzle of chocolate sauce.

My best tip for success is to let your batter rest for about thirty minutes before you start cooking. This helps the flour hydrate properly and makes your crepes much less likely to tear when you flip them in the pan.

Ingredients

  • 1 cup all purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup granulated sugar
  • 1/8 teaspoon salt
  • 1 1/4 cups whole milk
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Extra butter for the pan

Instructions

    Whisk the flour, cocoa powder, sugar, and salt together in a large mixing bowl until well combined.

    Add the milk, eggs, melted butter, and vanilla extract to the dry ingredients and whisk until the batter is smooth and free of lumps.

    Cover the bowl and let the batter sit at room temperature for at least 30 minutes.

    Heat a small nonstick skillet over medium heat and lightly grease it with a little butter.

    Pour about one fourth cup of batter into the center of the pan and swirl the pan quickly so the batter covers the bottom in a thin, even layer.

You can keep finished crepes warm by stacking them on a plate covered with foil. If you have leftovers, store them in the fridge with parchment paper between each layer and reheat them gently in a warm pan.
