Homemade Fresh Peach Pie
This classic fruit pie features a flaky crust filled with sweet and juicy fresh peaches.

Ingredients
- 2 1/2 cups all purpose flour
- 1 cup cold unsalted butter, cubed
- 1 teaspoon salt
- 6 to 8 tablespoons ice water
- 6 cups fresh peaches, peeled and sliced
- 3/4 cup granulated sugar
- 1/4 cup cornstarch
- 1 tablespoon lemon juice
- 1/2 teaspoon ground cinnamon
- 1 tablespoon butter for dotting

Combine the flour and salt in a large bowl, then cut in the cold butter until the mixture looks like coarse crumbs.

Add the ice water one tablespoon at a time, mixing until the dough comes together. Divide it into two discs, wrap them in plastic, and chill in the fridge for an hour.

Preheat your oven to 400 degrees Fahrenheit.

In a large bowl, toss the peach slices with sugar, cornstarch, lemon juice, and cinnamon until well coated.

Roll out one disc of dough and place it into a 9 inch pie plate.

Pour the peach mixture into the crust and dot the top with small pieces of butter.

Roll out the second disc of dough and place it over the peaches, trimming the edges and crimping them to seal the pie.
