There is nothing quite like the smell of tomatoes and garlic roasting in the oven. This soup is a favorite in my house because it turns simple garden produce into a smooth and flavorful meal that beats any canned version you can find at the store.

You can keep this soup light or make it extra creamy by stirring in a little splash of heavy cream or coconut milk at the end. It is the perfect recipe to reach for whenever you have an abundance of fresh tomatoes sitting on your counter.

Ingredients

  • 3 pounds fresh tomatoes, halved
  • 1 large yellow onion, chopped
  • 6 cloves garlic, peeled
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 2 cups vegetable or chicken broth
  • 1 cup fresh basil leaves, packed
  • Salt and black pepper to taste
  • Optional: 1/4 cup heavy cream

Instructions

    Preheat your oven to 400 degrees Fahrenheit.

    Place the tomatoes, onion, and garlic on a large baking sheet. Drizzle with olive oil and sprinkle with the oregano, salt, and pepper.

    Roast the vegetables for about 40 minutes until they are soft and slightly browned around the edges.

    Transfer the roasted vegetables and all the juices from the pan into a large pot or a blender.

    Add the broth and fresh basil to the pot.

    Use an immersion blender to puree the soup until it is completely smooth. If using a standard blender, work in batches and be careful with the hot liquid.

    Simmer the soup over low heat for 5 minutes. Stir in the cream if you want a richer texture.

    Taste and adjust the seasoning with more salt or pepper if needed before serving.
