Rosemary chicken salad is one of my favorite go to meals when I want something quick but still special. It combines tender shredded chicken with the brightness of dried cranberries and the crunch of toasted pecans for a really wonderful texture in every single bite.

The herb dressing makes all the difference here, especially with that fresh hit of rosemary. It is perfect for a light lunch on a warm day, and you can serve it in a lettuce wrap or on your favorite toasted sourdough bread.

Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1/3 cup mayonnaise
  • 1/4 cup dried cranberries
  • 1/4 cup pecans, chopped and toasted
  • 1 teaspoon fresh rosemary, finely minced
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

    In a large mixing bowl, combine the mayonnaise, minced fresh rosemary, lemon juice, and garlic powder.
