There is nothing quite like a bright, spicy sauce to bring your seafood dinner to life. This Thai seafood sauce relies on fresh ingredients and a punchy balance of lime and heat that tastes much better than anything you can buy in a bottle.

My top tip for the best flavor is to use fresh lime juice rather than bottled. The brightness of fresh citrus really makes the cilantro and garlic sing when you pour it over fresh prawns or steamed fish.

Ingredients

  • 10 to 15 green bird's eye chilies
  • 5 cloves garlic, peeled
  • 1/2 cup fresh cilantro, including stems
  • 1/4 cup granulated sugar
  • 1/2 cup fresh lime juice
  • 1/4 cup fish sauce
  • 2 tablespoons warm water

Instructions

    Place the bird's eye chilies, garlic, and fresh cilantro into a food processor or a mortar and pestle.

    Pulse or grind the ingredients until they form a coarse, uniform paste.

    In a small mixing bowl, stir together the sugar, fish sauce, and warm water until the sugar has completely dissolved.

    Add the cilantro and chili paste to the liquid mixture and stir well to combine.

    Taste your sauce and adjust by adding more lime juice if you like it tangier or a bit more sugar if you prefer it milder.

    Serve immediately or let it sit for twenty minutes so the flavors can mingle.

Store any leftovers in a glass jar in the refrigerator for up to three days. It is delicious drizzled over grilled squid, steamed shrimp, or even used as a dipping sauce for fried fish.
