If you love the classic cafe version of this sandwich, you are going to be so happy with this recipe. It combines a zesty tuna mixture with creamy avocado and fresh tomatoes for a lunch that feels really special without much effort.

My top tip is to use a good quality basil pesto for the best flavor. Since the tuna mixture is quite simple, the pesto really carries the dish so pick one you truly enjoy eating.

Ingredients

  • 1 can of tuna, drained
  • 2 tablespoons mayonnaise
  • 1 tablespoon basil pesto
  • 1 ripe avocado, sliced
  • 1 medium tomato, sliced
  • 2 slices of sourdough or rye bread
  • A handful of fresh arugula
  • Salt and black pepper to taste

Instructions

    In a small bowl, mix the drained tuna, mayonnaise, and pesto together until smooth.

    Toast your bread slices until they are golden brown and crisp.

    Spread the tuna mixture generously onto one slice of bread.

    Layer the avocado slices and tomato slices on top of the tuna.

    Add the fresh arugula, season with a pinch of salt and pepper, and place the second slice of bread on top to finish your sandwich.

You can store any leftover tuna mixture in an airtight container in the fridge for up to two days. If you are packing this for lunch later, keep the avocado in a separate container so it stays fresh and does not brown before you are ready to eat.
