Mediterranean Olive Oil Dip
This fresh and salty olive oil dip is perfect for soaking up with warm crusty bread.
dailyrecipesbook.comThis dip is one of my favorite ways to start a dinner party because it feels so fancy but takes hardly any time to prepare. It is much more interesting than plain oil, with plenty of bright herbs and salty olives that keep you coming back for more.
My best tip is to use a really good quality extra virgin olive oil since it is the star of the show here. If you have some fresh lemon zest on hand, a little bit grated right on top adds a wonderful zing.
Ingredients
- 1/2 cup extra virgin olive oil
- 1/4 cup pitted Kalamata olives, finely chopped
- 1 tablespoon fresh parsley, minced
- 1 teaspoon fresh oregano, chopped
- 1 clove garlic, minced
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon balsamic vinegar
- A pinch of sea salt
- Freshly cracked black pepper to taste
Instructions

Take a small bowl and add the chopped olives, parsley, oregano, garlic, and red pepper flakes.

Pour the olive oil and balsamic vinegar over the herb mixture.

Add a small pinch of salt and some cracked black pepper.

Stir everything together well so the flavors start to combine.

Let the dip sit at room temperature for about ten minutes before serving to help the flavors meld.

Serve in a shallow bowl with warm crusty bread for dipping.

Store any leftovers in an airtight container in the fridge for up to two days, but be sure to let it come back to room temperature before serving so the olive oil can turn back into liquid. You can also toss the remaining dip with some cooked pasta for a quick and easy lunch the next day.
