I first saw this dish on the show Midnight Diner and fell in love with how simple and satisfying it looks. It is the ultimate treat for noodle lovers because you get the perfect mix of salty yakisoba and a soft, buttery hot dog bun. It is a very popular snack in Japan that people grab for a quick lunch or a late night bite.

To make this really stand out, I recommend using a little Japanese mayonnaise on top. The creamy sauce balances the savory stir fry sauce beautifully. If you can find the bright red pickled ginger at the store, definitely add it for a nice pop of color and a bit of a spicy kick.

Ingredients

  • 2 packages pre cooked yakisoba noodles
  • 4 hot dog buns
  • 1/2 cup thinly sliced pork belly or bacon
  • 1 cup shredded green cabbage
  • 1/2 small onion, sliced thin
  • 4 tablespoons yakisoba sauce
  • 1 tablespoon neutral oil
  • Japanese mayonnaise for drizzling
  • Pickled red ginger for garnish
  • Dried green seaweed powder for garnish

Instructions

  1. 1

Heat the oil in a large skillet over medium high heat and add the pork slices.

  2. 2

Cook the pork until it is lightly browned, then toss in the onions and cabbage.

  3. 3

Sautรฉ the vegetables until they are soft and the onions are translucent.

  4. 4

Add the yakisoba noodles to the pan and pour in a small splash of water to help them loosen up.

  5. 5

Stir the noodles and vegetables together until everything is well mixed.

  6. 6

Pour the yakisoba sauce over the noodles and stir fry for another two or three minutes until the sauce coats everything and the noodles are hot.

  7. 7

Split your hot dog buns down the middle and toast them lightly in the oven or on a pan with a little butter.

  8. 8

Use tongs to stuff a generous amount of the noodles into each bun.

  9. 9

Top each sandwich with a drizzle of mayo, a pinch of seaweed powder, and a small pile of pickled ginger.

๐Ÿ’ก Tips

If you are making these ahead of time, let the noodles cool slightly before putting them in the buns so the bread does not get soggy. You can wrap these in plastic wrap for a portable lunch that stays fresh for several hours.
