When the week gets busy, I always turn to this taco mac recipe. It is the perfect blend of two comfort food favorites, and the best part is that everything cooks in a single pan. This saves so much time on cleanup, which is exactly what a home cook needs after a long day.

You can easily adjust the heat by choosing a mild or spicy enchilada sauce. If you want to add some extra nutrients, stir in a handful of fresh spinach or some canned corn right before the cheese melts. It is a wonderful way to get a hearty meal on the table in under thirty minutes.

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 2 cups macaroni pasta
  • 2 cups beef broth
  • 1 cup red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 tablespoon oil
  • Salt and pepper to taste

Instructions

  1. 1

Heat the oil in a large skillet over medium heat.

  2. 2

Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.

  3. 3

Drain any excess fat from the skillet.

  4. 4

Stir in the taco seasoning, dry macaroni, beef broth, and enchilada sauce.

  5. 5

Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 10 to 12 minutes until the pasta is tender.

  6. 6

Remove the lid, sprinkle the cheese over the top, and let it sit for a minute until the cheese is melted and bubbly.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to three days. You can reheat individual portions in the microwave with a splash of water to keep the pasta from drying out.
