Zucchini used to be a vegetable I tried to avoid, but this simple recipe changed my mind. By using high heat and a few pantry staples, you get perfectly tender rounds that are browned on the outside and full of savory flavor.

The secret is using a bit of oregano and Parmesan cheese to brighten up the natural flavor. It is a quick and reliable side dish that goes with almost any meal you are planning to serve.

Ingredients

  • 2 medium zucchini, sliced into thin rounds
  • 2 tablespoons olive oil or butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/4 cup freshly grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. 1

Heat the olive oil or butter in your largest skillet over medium high heat.

  2. 2

Add the sliced zucchini to the pan in a single layer if possible. If they overlap, that is perfectly fine.

  3. 3

Cover the skillet with a lid for 2 minutes to help the vegetables soften through.

  4. 4

Remove the lid and continue to cook for about 6 to 8 minutes, stirring and flipping the slices occasionally so they brown evenly.

  5. 5

Sprinkle the garlic powder, onion powder, and oregano over the zucchini during the last few minutes of cooking.

  6. 6

Once the zucchini is tender and has nice golden brown spots, remove it from the heat.

  7. 7

Stir in the Parmesan cheese, season with a little salt and pepper, and serve immediately.

๐Ÿ’ก Tips

Store your leftovers in an airtight container in the fridge for up to 3 days. When you want to eat them again, warm them up in a skillet over medium heat for a few minutes to keep the texture nice. Do not freeze this dish as the zucchini will turn mushy once thawed.
