There is nothing quite like the smell of tomatoes roasting in the oven with fresh garlic and herbs. I love this recipe because it turns simple ingredients into something that tastes like it spent all day simmering on the stove.

My best tip is to use the best tomatoes you can find at the market. Ripe tomatoes make all the difference, but even the smaller ones from the store turn out beautifully when roasted at a high temperature.

Ingredients

  • 1 pound ripe tomatoes, halved or quartered
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh basil leaves for garnish

Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit.

  2. 2

Place the cut tomatoes in a baking dish in a single layer.

  3. 3

In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, dried basil, salt, and pepper.

  4. 4

Pour the mixture over the tomatoes and toss gently to coat them evenly.

  5. 5

Roast in the oven for 15 minutes until the tomatoes are soft and slightly caramelized.

  6. 6

Serve warm with a garnish of fresh basil leaves.

๐Ÿ’ก Tips

These tomatoes are delicious served over crusty toasted bread for an easy appetizer, or you can toss them into your favorite warm pasta. Store any leftovers in an airtight container in the fridge for up to three days.
