If you are usually hesitant about cooking zucchini because it can get mushy, this recipe is going to change your mind. The trick is getting a good sear on the vegetables so they stay tender without losing their shape. It is a fresh, flavorful side dish that works with just about any main course.

My friend Erika shared this idea with me, and it reminds me of a classic green bean amandine. It is incredibly easy to put together on a busy weeknight, and the toasted almonds add such a lovely crunch. I hope you enjoy this one as much as my family does.

Ingredients

  • 2 medium zucchini, sliced into half moons
  • 1 small red onion, thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup sliced almonds
  • 2 cloves garlic, minced
  • 1 teaspoon fresh lemon juice
  • Salt and black pepper to taste

Instructions

    Heat one tablespoon of olive oil in a large skillet over medium high heat.

    Add the sliced zucchini and red onion to the skillet. Cook them for about 5 to 7 minutes, stirring occasionally, until the vegetables are golden brown and tender.

    Push the vegetables to the side of the pan and add the remaining tablespoon of olive oil and the sliced almonds to the center.

    Toast the almonds for 1 to 2 minutes until they are golden brown, then add the minced garlic and cook for another 30 seconds until fragrant.

    Toss everything together in the pan, remove from the heat, and stir in the fresh lemon juice.

    Season with salt and pepper to your liking and serve immediately.

💡 Tips

Store any leftovers in an airtight container in the fridge for up to three days. This dish tastes best when served warm, but you can also eat it cold as a component for a salad. To keep the almonds extra crunchy, toast them separately if you are planning to save some for later.
