Simple Baked Feta with Tomatoes
A warm and creamy Greek inspired appetizer that comes together in less than twenty five minutes.
dailyrecipesbook.comThis baked feta is one of my favorite things to make when friends stop by for a visit. It is inspired by the simple, delicious appetizers I enjoyed during a trip to Greece, where the cheese becomes soft and melty in the oven while the tomatoes turn sweet and jammy.
I love this dish because it is so easy to prepare. You just need a few basic pantry staples and a good block of feta cheese. It works perfectly as a quick snack or as part of a larger grazing platter when you are hosting a crowd.
Ingredients
- 4 to 5 ounce block of feta cheese
- 10 cherry tomatoes
- 1 garlic clove
- 10 Kalamata olives
- 1 tablespoon olive oil
- 1/2 teaspoon dried oregano
- 2 tablespoons fresh parsley, chopped
- Kosher salt to taste
Instructions

Preheat your oven to 400 degrees Fahrenheit.

Slice the cherry tomatoes in half and place them in a small bowl with a few pinches of kosher salt.

Mince the garlic clove finely.

Place the cherry tomatoes, minced garlic, and Kalamata olives into a small oven safe baking dish.

Set the block of feta cheese in the center of the dish.

Drizzle the olive oil over the feta and tomatoes, then sprinkle the dried oregano over everything.

Bake for about 18 minutes, or until the feta is soft and the tomatoes have burst.

Remove from the oven, garnish with chopped fresh parsley, and serve immediately.

Serve this dish warm straight from the oven with crusty bread, pita chips, or fresh cucumber slices. If you have leftovers, store them in a sealed container in the fridge for up to 3 days and reheat gently in a 350 degree oven.
