There is nothing quite like the smell of fresh pancakes hitting a hot griddle. I love this recipe because it uses basic pantry staples that you likely already have in your kitchen right now.

My best advice is to let the batter rest for a few minutes while the pan heats up. This little trick helps the leavening agents do their job so your pancakes come out extra light and fluffy every single time.

Ingredients

  • 1 and 1/2 cups all purpose flour
  • 3 and 1/2 teaspoons baking powder
  • 1 tablespoon white sugar
  • 1 teaspoon salt
  • 1 and 1/4 cups milk
  • 1 egg
  • 3 tablespoons butter, melted

Instructions

  1. 1

Whisk the flour, baking powder, sugar, and salt together in a large mixing bowl.

  2. 2

Make a well in the center of the dry ingredients and pour in the milk, egg, and melted butter.

  3. 3

Mix the wet and dry ingredients until just combined. The batter should have a few small lumps, so be careful not to overmix.

  4. 4

Heat a lightly oiled griddle or frying pan over medium high heat.

  5. 5

Pour about 1/4 cup of batter onto the griddle for each pancake.

  6. 6

Brown both sides of the pancake until golden and serve immediately with your favorite syrup.

๐Ÿ’ก Tips

Store any leftovers in the fridge for up to three days and pop them in the toaster to reheat. You can also freeze these pancakes with parchment paper between them to keep them from sticking together. Serve with fresh berries or a dollop of yogurt for a balanced meal.
