There is nothing quite like the smell of homemade pancakes griddling on the stove to wake up the house. This is a go to recipe in my kitchen because it uses basic pantry staples that you likely already have on hand.

I love keeping things simple with just a pat of butter and a generous pour of maple syrup. If you have any extra fruit in the fridge like blueberries or sliced strawberries, they make a wonderful addition to the batter before you flip them.

Ingredients

  • 1 1/2 cups all purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 tablespoon white sugar
  • 1 teaspoon salt
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons butter, melted

Instructions

  1. 1

Whisk the flour, baking powder, sugar, and salt together in a large bowl.

  2. 2

Create a small well in the center and pour in the milk, egg, and melted butter.

  3. 3

Stir the mixture until just combined. A few small lumps are perfectly fine and will keep the pancakes light.

  4. 4

Heat a lightly oiled griddle or frying pan over medium heat.

  5. 5

Pour or scoop the batter onto the griddle using about a quarter cup for each pancake.

  6. 6

Cook until bubbles form on the surface and the edges look dry, then flip and brown the other side until golden.

๐Ÿ’ก Tips

You can store leftover pancakes in an airtight container in the fridge for up to three days. To reheat, just pop them in the toaster or a warm oven until they are soft again. These also freeze beautifully if you want to make a big batch for quick weekday breakfasts.
