Simple Homemade Veggie Quiche

My biggest tip for this recipe is to make sure your vegetables are well drained after cooking. This keeps your crust nice and flaky rather than soggy. You can easily swap in your favorite greens like spinach or kale depending on what is in season.
Ingredients
- 1 pre baked pie crust
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 red bell pepper, diced
- 2 cups fresh baby spinach
- 4 large eggs
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

Preheat your oven to 375 degrees Fahrenheit.

Heat the olive oil in a skillet over medium heat and add the onion and bell pepper. Sauté until they are soft and the onions are translucent.

Add the spinach to the skillet and cook just until it wilts, then remove the pan from the heat and drain any excess liquid.

In a medium bowl, whisk together the eggs, cream, salt, and pepper until well combined.

Spread the cooked vegetables over the bottom of the pre baked pie crust and sprinkle the shredded cheese on top.

Bake for 30 to 35 minutes or until the center is set and the top is lightly golden brown.

Let the quiche rest for about 10 minutes before slicing so it holds its shape.

Store any leftover quiche in an airtight container in the fridge for up to three days. It tastes delicious cold or quickly warmed up in the oven. For a pretty presentation, garnish the top with a few fresh chives before serving.
