This crab omelette is one of my favorite ways to enjoy a bit of luxury during a busy weekday morning. The combination of fluffy eggs and tender crab is classic and always feels like a treat.

I recommend using fresh lump crab meat if you can find it, but canned crab works just fine in a pinch. Just be sure to pick through the meat carefully so you do not find any hidden shells before you add it to the pan.

Ingredients

  • 3 large eggs
  • 1 tablespoon butter
  • 1/2 cup lump crab meat
  • 1 green onion, thinly sliced
  • 1 pinch of salt
  • 1 pinch of black pepper
  • 1 teaspoon fresh parsley, chopped

Instructions

    Crack the eggs into a small bowl and whisk them well with a fork until the yolks and whites are combined.

    Season the eggs with a little salt and pepper.

    Melt the butter in a nonstick skillet over medium heat.

    Pour the eggs into the pan and let them cook until the edges start to set.

    Sprinkle the crab meat and half of the green onions over one side of the eggs.

    Carefully fold the omelette over the filling and cook for another minute until the eggs are set to your liking.

    Slide the omelette onto a plate and garnish with the remaining green onions and fresh parsley.

Serve this warm with a side of buttered toast or a simple green salad. If you have leftovers, keep them in an airtight container in the fridge for one day, but it is best enjoyed immediately after cooking.
