Meal prep does not have to be complicated to be good. I find that when I set aside a little time on Sunday to roast some vegetables and cook a big batch of grains, my whole week feels much calmer. It keeps me from grazing on random snacks when I get busy.

These bowls are a great base because you can change the dressing or add extra protein to keep things interesting. I like to keep the roasted veggies and quinoa in separate containers until I am ready to eat so everything stays nice and fresh.

Ingredients

  • 1 cup dry quinoa
  • 2 cups vegetable broth
  • 2 bell peppers, chopped
  • 1 head of broccoli, cut into florets
  • 1 red onion, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 can chickpeas, rinsed and drained
  • Lemon tahini dressing for serving

Instructions

    Preheat your oven to 400 degrees Fahrenheit.

    Place the chopped peppers, broccoli, and red onion on a large baking sheet.

    Drizzle the vegetables with olive oil and sprinkle with oregano, salt, and pepper. Toss everything until well coated.

    Roast the vegetables in the oven for about 20 to 25 minutes until they are tender and slightly browned.

    While the vegetables roast, combine the quinoa and vegetable broth in a pot. Bring to a boil, then cover and simmer for 15 minutes or until the liquid is absorbed.

    Let the quinoa cool slightly before fluffing it with a fork.

    Divide the quinoa and roasted vegetables into four airtight containers. Add a portion of chickpeas to each container.

    Store in the refrigerator and drizzle with lemon tahini dressing right before you serve.

You can store these in the fridge for up to four days. If you want a bit more protein, feel free to add grilled chicken or tofu. Always store your dressing in a small separate container so your greens or veggies do not get soggy.
