There is something so satisfying about a simple salad that fills you up without weighing you down. This tuna and white bean salad has become a favorite in my kitchen because it uses pantry staples to create something that tastes incredibly fresh.

The secret here is using good quality olive oil packed tuna, which adds so much flavor to the creamy beans. I love to squeeze a little extra lemon juice right before serving to brighten up all the flavors. It is a great dish to keep in your fridge for busy days when you need a healthy meal in a hurry.

Ingredients

  • 2 cans of tuna packed in olive oil, drained
  • 1 can of cannellini beans, rinsed and drained
  • 1/4 cup sun dried tomatoes, chopped
  • 1/4 red onion, finely diced
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon extra virgin olive oil
  • Salt and black pepper to taste

Instructions

  1. 1

In a large bowl, combine the drained tuna and the rinsed white beans.

  2. 2

Add the chopped sun dried tomatoes, diced red onion, and fresh parsley to the bowl.

  3. 3

Drizzle the lemon juice and olive oil over the mixture.

  4. 4

Gently toss everything together until well combined, being careful not to mash the beans too much.

  5. 5

Season with salt and pepper to your liking and serve immediately.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to two days. This salad tastes even better after sitting for an hour because the beans soak up all the lemon and herb flavors. You can serve this over a bed of fresh greens or with a side of toasted crusty bread.
