If you are looking for a treat that fits almost any dietary need, these simple pecan cookies are for you. They are naturally gluten free and dairy free while being incredibly easy to whip up whenever you need a quick snack.

Because there is no flour or sugar added, the texture comes down to how well you blend the pecans. Make sure to process them until they are fine but stop before they turn into nut butter.

Ingredients

  • 2 cups raw pecans
  • 1 cup pitted medjool dates

Instructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.

  2. 2

Place the pecans and pitted dates into a food processor.

  3. 3

Pulse the mixture until it turns into a fine, sticky crumb that holds together when you press it with your fingers.

  4. 4

Scoop about one tablespoon of the mixture at a time and roll it into a ball.

  5. 5

Place the balls onto the prepared baking sheet and flatten them slightly with the palm of your hand or the bottom of a glass.

  6. 6

Bake for 10 minutes until the edges are golden brown.

  7. 7

Let the cookies cool completely on the baking sheet before serving so they have time to set.

๐Ÿ’ก Tips

Store these cookies in an airtight container at room temperature for up to three days. For a longer shelf life, keep them in the refrigerator for up to a week. They are wonderful served alongside a warm cup of coffee or tea.
