Smashed Olives with Burrata

You can serve this as an impressive appetizer for friends or keep it all for yourself as a delicious lunch. If you have time, let the olives sit in the fridge for a few hours before eating, as the flavors get even better after a little soak in that lemony olive oil.
Ingredients
- 10 ounces pitted Castelvetrano olives, drained
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- Zest of half a lemon
- 1 teaspoon fresh oregano leaves
- Freshly ground black pepper
- Salt to taste
- 2 to 3 balls of fresh burrata cheese
- 1 loaf ciabatta bread
- Extra olive oil for the bread

Place the olives on a sturdy cutting board and use the flat bottom of a heavy glass to gently smash them until they are broken into chunky, uneven pieces.

Transfer the smashed olives to a bowl and toss them with the olive oil, lemon juice, lemon zest, fresh oregano, and plenty of black pepper. Taste and add a pinch of salt if needed.

If you have the time, let the mixture marinate in the refrigerator for a few hours or even overnight. If the oil solidifies in the fridge, just let it sit at room temperature for a bit before serving.

Slice your ciabatta bread into pieces, drizzle with a little olive oil, and toast in an air fryer at 375 degrees for 4 minutes, or toast in a pan or under your oven broiler until golden and crispy.

Tear the burrata balls into large chunks and arrange them over the warm toasted bread.

Spoon the olive mixture and all those flavorful juices right over the top of the cheese and bread, adding an extra sprinkle of fresh oregano and black pepper before serving.

Store any leftover olive mixture in an airtight container in the fridge for up to one week. If you have leftover burrata, it is best enjoyed within 24 hours of opening the package for the freshest, creamies flavor.
