Sticky Apricot Chicken is one of my favorite quick meals when I want something special but do not have hours to spend in the kitchen. The combination of sweet apricot jam and spicy chili paste creates a glaze that is absolutely addictive, and the cornstarch coating ensures the chicken stays perfectly crispy even after it hits the sauce.

Since this dish comes together in just 30 minutes, it is perfect for a busy weeknight. My best tip is to use a large zip top bag to coat your chicken. It keeps your hands clean and ensures every single piece gets an even dusting of cornstarch for that ideal crunch.

Ingredients

  • 1 1/2 pounds boneless skinless chicken breast, cut into 1 inch pieces
  • 1 large egg
  • 1/4 teaspoon garlic salt
  • 1 cup cornstarch
  • 1/2 cup canola oil
  • 1 cup apricot jam or preserves
  • 1 clove garlic, minced
  • 1 teaspoon ginger paste
  • 2 tablespoons low sodium soy sauce
  • 3 tablespoons brown sugar
  • 1 tablespoon garlic chili paste
  • Sliced green onions and red pepper flakes for garnish

Instructions

    Place the chicken pieces and garlic salt into a large zip top bag. Add the egg, seal the bag, and massage the chicken until it is well coated.

    Add the cornstarch to the bag, seal it, and shake well until every piece of chicken is fully coated.

    Heat the oil in a medium skillet over medium high heat. Add the chicken and cook for 7 to 8 minutes until browned and cooked through, then remove the chicken from the skillet and set it aside.

    In a medium bowl, whisk together the apricot jam, minced garlic, ginger paste, soy sauce, brown sugar, and chili garlic paste.

    Pour the sauce mixture into the same skillet and cook over medium high heat for 1 to 2 minutes until it becomes bubbly and slightly thickened.

    Add the cooked chicken back into the skillet and toss everything together until the chicken is thoroughly coated in the sticky sauce.

    Garnish with sliced green onions and red pepper flakes before serving.
