Strawberry Oatmeal Breakfast Bars
These tasty bars feature a sweet, jammy strawberry center tucked between layers of buttery, golden oat crumble.

Ingredients
- 2 cups rolled oats
- 1 and 1/2 cups whole wheat pastry flour or oat flour
- 1/2 cup brown sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup cold butter, cubed
- 3 cups fresh strawberries, chopped
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice

Preheat your oven to 375 degrees Fahrenheit and line an 8 by 8 inch baking pan with parchment paper.

In a medium bowl, combine the chopped strawberries, granulated sugar, cornstarch, and lemon juice. Mash the berries slightly with a fork until they look like a chunky sauce.

In a separate large bowl, mix together the oats, flour, brown sugar, baking soda, and salt.

Add the cold butter to the oat mixture and use a pastry cutter or your fingers to work it in until the dough looks like coarse crumbs.

Press about two thirds of the oat mixture into the bottom of your prepared pan to form an even base.

Spread the strawberry mixture evenly over the oat base.

Sprinkle the remaining oat mixture over the top of the berries and press down very gently.

Bake for 35 to 40 minutes until the top is golden brown and the berry filling is bubbling.
