August is my favorite time of year to head to the garden or farmers market. Everything is ripe and full of flavor, so you really do not need to do much to make a delicious meal. This pasta relies on the sweetness of fresh corn, juicy tomatoes, and tender zucchini to do the heavy lifting.

I love this recipe because it is very low effort on those hot days when you do not want to be stuck in the kitchen. If you have extra fresh herbs like basil or parsley sitting on your counter, be sure to toss them in at the end for a bright finish.

Ingredients

  • 12 ounces of your favorite pasta
  • 2 tablespoons olive oil
  • 2 cups chopped zucchini
  • 1 cup fresh corn kernels
  • 2 cups cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, torn
  • 1/4 cup grated parmesan cheese
  • Salt and black pepper to taste

Instructions

    Bring a large pot of salted water to a boil and cook the pasta according to the package directions until it is al dente.

    While the pasta cooks, heat the olive oil in a large skillet over medium heat.

    Add the zucchini and corn to the skillet and sautรฉ for about five minutes until the vegetables are tender.

    Stir in the garlic and the cherry tomatoes and cook for another three minutes until the tomatoes start to soften.

    Drain the pasta and add it directly into the skillet with the vegetables.

    Toss everything together well and season with salt and pepper to taste.

    Remove from the heat and stir in the fresh basil and parmesan cheese before serving.

Leftovers keep well in the fridge for up to two days in an airtight container. You can add grilled chicken or chickpeas if you want to include extra protein in the bowl.
