This baked Hawaiian chicken is my favorite way to bring a little tropical sunshine into the kitchen. The combination of crispy chicken pieces with sweet pineapple and colorful bell peppers creates a meal that tastes like a treat from your favorite restaurant but is simple enough for a busy weeknight.

My kids absolutely love the sweet and tangy glaze, and I love how easy it is to customize. You can easily toss in extra vegetables like broccoli or snap peas to clean out your fridge. It is a hearty and satisfying dish that always feels like a special occasion.

Ingredients

  • 4 boneless skinless chicken breasts, cut into 1 inch cubes
  • Salt and pepper to taste
  • 1/2 cup cornstarch
  • 2 large eggs, lightly beaten
  • 2 tablespoons vegetable oil
  • 1 cup pineapple tidbits, canned
  • 1 red bell pepper, chopped
  • 1/2 cup brown sugar
  • 1/4 cup pineapple juice
  • 1/4 cup orange juice
  • 2 tablespoons lime juice
  • 1 tablespoon lime zest
  • 2 tablespoons vinegar
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon minced garlic
  • 1 tablespoon cornstarch (for the sauce)

Instructions

    Preheat your oven to 325 degrees and lightly grease a 9x13 inch baking dish.

    Season the chicken cubes with salt and pepper, then toss them in 1/2 cup of cornstarch until coated. Dip each piece into the beaten eggs.

    Heat the vegetable oil in a large skillet over medium high heat. Brown the chicken in batches so the pieces have room to crisp up, then transfer them to the prepared baking dish.

    In a medium bowl, whisk together the brown sugar, pineapple juice, orange juice, lime juice, lime zest, vinegar, soy sauce, garlic, and the remaining tablespoon of cornstarch.

    Pour the sauce over the chicken, then top with the pineapple tidbits and chopped bell peppers.

    Bake uncovered for 40 minutes, making sure to stir the chicken occasionally so it cooks evenly in the sauce.

Serve this over fluffy white rice or noodles to soak up all the extra sauce. If you have leftovers, keep them in an airtight container in the fridge for up to three days and reheat gently on the stove or in the microwave. For the best texture, avoid using fresh pineapple as it can make the chicken too soft.
