There is something so special about the smell of beef sizzling on the grill. These skewers are a favorite in my house because they combine the richness of coconut milk with the fragrant spices of Thai curry, making every bite feel like a treat.

You do not need to be a professional chef to get these right. Because the marinade works so hard to tenderize the meat, you get juicy results even if you are just starting out with your grill.

Ingredients

  • 1 pound sirloin steak, sliced into thin strips
  • 1/2 cup full fat coconut milk
  • 1 tablespoon red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 1 teaspoon ground turmeric
  • Wooden skewers, soaked in water for 30 minutes

Instructions

    Whisk the coconut milk, red curry paste, fish sauce, brown sugar, lime juice, and turmeric together in a medium bowl.

    Add the steak strips to the bowl and coat them thoroughly in the marinade. Cover and refrigerate for at least one hour.

    Preheat your grill to medium high heat.

    Thread the marinated beef strips onto your pre soaked skewers.

    Grill the skewers for about three minutes per side until the beef is cooked through and has a nice char.

Serve these with a side of jasmine rice and some extra lime wedges. If you have leftovers, keep them in an airtight container in the fridge for up to two days and reheat them gently in a pan.
